It doesn't take a lot of skill to Spoonerize today's solution. Some strained cleverness is required, however, to provide a context for that portion of a beef cow's anatomy closest to the brain stem of the animal.
In this view, the muscles of the upper neck can be affected by the brain itself so that if the beast is crazed by being penned up too long, the very protein of those tissues can be driven mad.
Happily, many cattlemen treat their stock to a free-ranging existence, and such humane treatment results in tasty hamburgers, made of sane meat.

The best I could come up with for the riddle-solution was "TEEN MASTER". Obviously wrong and not by a hair.
Hint: Solution is simple.
I had a late poetic outburst FLN - I went back to the beginning. But I see Owen's computer is back up and running so I'll go back to the bullpen (or stable)
Unless Sandy and/or Misty just can't stand to be without a Bilbo fix.

Delightful poem, Owen, perfect in every way--many thanks for that gift.
Got all four words without any problem but struggled a bit with the solution. Thought the first word would be MARE, but that, of course didn't work. Still, enjoyed the cute cartoon with the Saloon and Post Office in the background behind all the horses drinking and the wagon. Fun gloss, Ol'Man Keith, but surely no one eats horse-hamburgers, do they?
